We are seeking a talented and innovative Group Pastry Chef to lead the pastry operations across our portfolio of properties. This is a unique opportunity for a visionary pastry professional to create and oversee exceptional dessert experiences that align with our brand standards.

The Job

  • Develop and oversee pastry menus across multiple outlets and venues.
  • Lead, train, and mentor pastry teams at the property level to ensure consistency and quality.
  • Innovate new pastry concepts and seasonal offerings in line with brand identity.
  • Collaborate with Executive Chefs and Management to deliver memorable guest experiences.
  • Oversee the daily operations of the pastry section, ensuring efficiency and adherence to company standards.
  • Train team members on new recipes, techniques, and products introduced to the menu.
  • Decorate pastries and desserts to ensure visually appealing and flavourful presentations;
  • Oversee the procurement of supplies, ingredients, and equipment for the pastry section, ensuring purchases are within budget;
  • Maintain high standards of hygiene, food safety, and presentation.
  • Manage pastry-related costs, inventory, and supplier relationships.

Job Requirements

  • Minimum 5 years of pastry experience, including at least 3 years in a senior or group-level position.
  • Proven background in either fine dining or upscale restaurant groups.
  • Strong leadership and team development skills.
  • Creative flair with a deep understanding of international pastry trends.
  • Knowledge of HACCP and kitchen operations.
  • Willingness to travel between properties as required.
  • Candidate must be living in Malta or in Europe

  • Leadership and people skills with a strong mentoring attitude.
  • Excellent Communication skills - both verbal and written English are essential.
  • Strong organisational and time management skills.
