In Malta, Marvin Gauci Group runs award-winning restaurants Caviar & Bull, Sole Seabar by Tarragon, Don Royale, and Dinner in the Sky Malta owned by renowned chef Marvin Gauci.

We are looking for a Sous Chef to join our team.

Brief Position description:

The Sous Chef plays a pivotal role in supporting the Head Chef in delivering an exceptional fine-dining experience. This position requires a high level of culinary artistry, operational excellence, and leadership, ensuring that every dish reflects the restaurant’s vision and the luxury standards of the MG Group.

Main tasks and responsibilities
  • Work in close partnership with the Head Chef to develop refined, innovative menus that align with the restaurant’s culinary identity, brand values, and fine-dining philosophy.
  • Contribute creatively to the conception and execution of new dishes, emphasizing premium ingredients, modern techniques, and elegant presentation that resonate with a discerning clientele.
  • Oversee and coordinate kitchen operations, including staff scheduling and workflow organization, to ensure seamless service, precision, and efficiency at all times.
  • Ensure consistent delivery of impeccably executed dishes that meet the highest standards of quality, taste, and presentation in line with MG Group expectations.
  • Collaborate on menu design to achieve a perfect balance between aesthetics, flavor, and texture, elevating the overall guest dining experience.
  • Lead by example in mentoring, training, and developing a highly skilled kitchen brigade, fostering a culture of excellence, discipline, and continuous improvement.
  • Maintain exemplary order, discipline, and professionalism within the kitchen during all service periods.
  • Act as the Head Chef’s trusted deputy, assuming full responsibility for kitchen operations in their absence.
Educational and skill requirements
  • Previous experience in a similar role (Sous Chef or Senior Chef de Partie)
  • Strong culinary skills with knowledge of food preparation, kitchen operations, and food safety standards
  • Good command of the English language
  • Ability to work in a fast-paced environment
  • Strong leadership and team management skills
  • Excellent organizational and time-management abilities
