Butcher (Gozo)

Primary Responsibilities:

  1. Meat Preparation & Cutting:

    • Cut, trim, debone, and prepare various types of meat (e.g., beef, pork, poultry, lamb) according to customer preferences and store specifications.
    • Ensure proper portioning, weight accuracy, and packaging of meat products.
  2. Display and Merchandising:

    • Set up and maintain meat displays in a visually appealing manner, keeping them well-stocked and organized.
    • Rotate products to maintain freshness, ensuring older products are sold first (FIFO - First In, First Out).
  3. Customer Service:

    • Interact with customers, answering questions, and providing recommendations on meat products.
    • Take special orders and custom-cut meats according to customer specifications.
  4. Quality Control & Inspection:

    • Inspect incoming meat deliveries to ensure quality and safety standards are met.
    • Monitor the freshness and appearance of all meat products, ensuring any expired or damaged products are removed from display.
  5. Sanitation & Food Safety:

    • Adhere to strict food safety and sanitation procedures, including cleaning workstations, cutting tools, and equipment.
    • Follow proper hygiene practices, such as hand washing, use of gloves, and maintaining clean uniforms.
    • Ensure compliance with all health and safety regulations, including temperature control and meat storage practices.
  6. Stock Management:

    • Monitor stock levels, reordering as necessary to maintain product availability.
    • Collaborate with the inventory team for product requisitions and restocking of meat counters.
  7. Team Collaboration:

    • Work closely with other departments.
    • Train and mentor junior staff or apprentices in cutting techniques, food safety, and customer service.
  8. Record Keeping:

    • Maintain records of inventory, orders, and meat sales.
    • Track waste, damaged goods, and returns for reporting purposes.
  9. Equipment Operation:

    • Operate and maintain butchery equipment, including slicers, grinders, and meat saws, ensuring all equipment is in good working condition.
  10. Promotions and Special Offers:

    • Help with implementing store promotions or special pricing on meat products to drive sales.
    • Inform customers about current promotions and offer recommendations based on their needs.

Key Skills & Competencies:

  • Meat Cutting Expertise: In-depth knowledge of different meat cuts, preparation techniques, and butchery skills.
  • Customer Service: Strong communication skills, with the ability to handle inquiries and provide tailored customer service.
  • Attention to Detail: Ability to ensure accuracy in meat preparation, portioning, and packaging.
  • Hygiene and Safety Awareness: Strong understanding of food safety standards and practices.

Qualifications:

  • Previous experience in a butchery or similar role is preferred.
  • Physical ability to handle heavy cuts of meat and operate cutting equipment.
  • Food handling certification is required.
