

Chef / Head Chef
OyOy Restaurant is a premium Mediterranean seafood destination located in Spinola Bay, Malta. Our concept is built around fresh, high-quality seafood, refined Mediterranean cuisine, and an elegant yet relaxed seaside experience.
We are seeking a visionary Head Chef to lead our kitchen and elevate our culinary offering to the highest standards. This role is ideal for a chef with strong leadership, creativity, and a deep respect for product-driven cuisine.

- Lead and manage all kitchen operations with a strong focus on quality, consistency, and efficiency
- Design and evolve menus aligned with OyOy’s Mediterranean seafood concept
- Ensure the highest standards in food preparation, presentation, and hygiene
- Manage food cost, suppliers, and inventory with precision
- Build, train, and motivate a high-performing kitchen team
- Collaborate with management on seasonal offerings, tasting menus, and special events
- Maintain excellence during both dinner service and growing lunch operations
- Oversee plating, workflow, and service coordination with front-of-house
- Drive innovation while respecting product integrity and simplicity
- Proven experience as Head Chef or Senior Sous Chef in fine dining or premium restaurants
- Strong background in Mediterranean cuisine and seafood
- Deep knowledge of fresh product handling (fish, shellfish, seasonal ingredients)
- Leadership and team management skills
- High attention to detail and passion for excellence
- Strong understanding of food cost control and kitchen operations
- Ability to perform under pressure in a high-end service environment
- Fluent in English (Italian or Spanish is a plus)
- Culinary degree or equivalent professional experience
