Pastry Sous Chef
Ramla Bay Resort is on the hunt for an experienced Pastry Sous Chef! Support the Executive Pastry Chef in delivering exceptional desserts and pastries, ensuring the highest standards of quality and presentation for every guest.
Key Responsibilities:
- Assist the Executive Pastry Chef in managing daily operations of the pastry section.
- Prepare, bake, and present pastries, desserts, and other baked goods to the highest standards.
- Ensure ingredient quality, freshness, and food safety standards are consistently met.
- Manage stock levels, including ordering, inventory control, and minimizing wastage.
- Supervise, train, and support the pastry team as directed by the Executive Pastry Chef.
- Maintain a clean, organized, and compliant work environment in line with health and safety regulations.
- Collaborate with the Executive Pastry Chef to develop new recipes and seasonal dessert menus.
- Promote sustainability by minimizing waste and creatively using all components in pastry and dessert preparations.
Requirements:
- Proven experience as a Pastry Chef or Pastry Sous Chef, with strong knowledge of pastry techniques and dessert presentation
- Experience preparing a variety of pastries from different countries and international pastry styles.
- Knowledge of traditional Maltese pastries and desserts.
- Familiarity with food safety standards and best practices.
- Previous experience in a team-support role, capable of assisting and motivating colleagues.
- Ability to thrive in a fast-paced environment with attention to detail and creativity.
Only candidates who are already in Malta and hold a valid work permit will be considered.
