
Onella
In August 2022 Onella was created. A cosy, casual wine bar in the central-northern part of Malta - Naxxar, where people gather for lovely wine, beer, cocktails, and good conversation, where service comes with a friendly smile. Passionate about their wine menu featuring a large variety of wine as well as a further 25 wines-by-the-glass, you can count on a wide selection of red, white, rosé, and sparkling from all four corners of the wine world. All drinks are served in RIEDEL glassware.
Onella also features a fully-stocked kitchen, with delicious sharing plates every single week like Parmigiana, Baked Rosette, Rabbit Spring Rolls, Lasagna Fritta, Parma Ham, and Parmigiano Focaccia. The food menu offers a variety of vegetable, meat, and fish-based dishes sure to satisfy any diner’s palate.
Located within a house at Victory Square, close to Naxxar’s church, this house was built by Vincenzo Bonavia towards the middle of the 19th century and the coat of arms on the entrance door shows the griffon, a symbol of Christ representing the right road (‘Bona’ + ‘Via’).
Onella is run by the team behind Sliema’s iconic Fernandõ Gastrotheque – a fine dining establishment recognised in the latest edition of the Michelin Guide.

Sous Chef

We are seeking a talented and passionate Sous Chef to join our dynamic kitchen team. The ideal candidate will work closely with the Head Chef to deliver exceptional culinary experiences. If you have a strong work ethic, creativity, and a love for food, we want to hear from you!
Main tasks and responsibilities
- Assist the Head Chef in daily kitchen operations.
- Prepare and cook high-quality dishes according to established recipes and standards.
- Ensure food safety and hygiene standards are maintained at all times.
- Collaborate with the team to develop new menu items and specials.
- Manage inventory and ensure proper storage of ingredients.
- Maintain a clean and organized work environment.
Educational and skill requirements
- Proven experience as a Chef or in a similar role.
- Culinary school diploma or equivalent certification is preferred.
- Strong knowledge of cooking techniques, cuisines, and kitchen equipment.
- Ability to work in a fast-paced environment and handle pressure.
- Excellent teamwork and communication skills.
- Flexibility to work evenings, weekends, and holidays as needed.
