LBTDN is mainly focused on Italian and Mediterranean cuisine that elevates its food by creatively refashioning classical dishes with native ingredients. It is based in a garden environment full of fresh plants and unique flowers which reflect the owner’s connection with nature. The dim mood lighting is enhanced with candle light to create an ambiance of warmth, intimacy, and romance. The story behind the brand and concept is what we believe sets us apart from all other restaurants on a global scale. The restaurant is named after the owner himself ie; ‘Il Nonno’ and its name literally translates to; ‘The Good restaurant of Grandpa’. Although restaurateur Ben Muscat, is still the active CEO of the company, the grandchildren are nowadays involved heavily in the restaurant operations and look destined to continue their grandparents’ footsteps. Our mouthwatering food varies from wood oven baked pizza and roasts, divine pasta dishes, big juicy steaks, our famous spare Ribs and fresh Fish. The bar and wine list compliments the delightful menu. Clients may choose to dine inside the Trattoria or al fresco in the gardens. Private parking area at the Palazzo Pescatore grounds is offered free of charge.

About the Company:

La Buona Trattoria Del Nonno is looking for a confident, reliable and ambitious Head Waiter / Head Waitress to join our team.

We’re a busy, family-run Italian restaurant in St Paul’s Bay, and we’re looking for someone who takes genuine pride in hospitality — someone who can own their station, deliver excellent service and lead by example.

This is a role for someone who wants to grow with the restaurant, not simply work another shift.

Your Responsibilities

Take orders confidently and manage your own station
Follow our Steps of Service consistently
Deliver warm, professional and attentive service
Maintain our opening & closing checklists properly
Know our food menu and confidently answer guest questions
Study and upsell our cocktails, wines and food
Look after regular, VIP and high-profile guests
Communicate effectively with the kitchen, bar and management
Support the team during busy services
Keep your station organised, clean and fully prepared
Lead by example and contribute to a positive team environment

WHO WE’RE LOOKING FOR
We’re looking for someone who is:

Reliable • Confident • Energetic • Professional • Hungry to learn

Previous hospitality experience is strongly preferred, particularly in a busy restaurant environment.

You should:

Have excellent spoken English
Be confident and comfortable with guests
Have a strong work ethic
Be a genuine team player
Be available for evenings and weekends
Have your own reliable transport to/from St Paul’s Bay

Italian, French or Spanish is a strong advantage.

Knowledge of wine, cocktails and food is also highly valued.

💰 WHAT WE OFFER

€7.50–€9.50 NET per hour + TIPS
Wage is negotiable depending on experience, skills and attitude.

FULL-TIME: 5–6 shifts per week · approximately 30–35 hours
PART-TIME: 3 shifts per week · approximately 18–20 hours

Hours: Generally, 6:00pm–12:00am, plus Sunday lunch during winter.
