Restaurant Manager

Our client a well-established chain of restaurants is seeking an experienced Restaurant Manager for an outlet in St Julian's, Malta.

The Restaurant Manager will report to the Junior Operations Manager and Operations Manager.


General Responsibilities

The Restaurant Manager plays a crucial role in overseeing the smooth and efficient daily running of the Restaurant’s operation, in compliance with all Company Policies and Procedures, as well as local laws. The role will include the achievement of all targets concerning cost, quality and standards. The Restaurant Manager will use adequate professional management skills to create and maintain a good and healthy atmosphere within the Restaurant. Ensuring excellent customer service and the maintenance of the restaurant’s profitability is also a essential. The Manager will assume the role and duties of the assistant manager and any other line staff if and when the need arises.


Main Duties and Responsibilities

  • Responsible for running the Restaurant by maintaining high standards of food and beverage service, productivity, and manning levels.
  • Manage all staff effectively, inspire and motivate his/her team and carry out constant and consistent on the job training in order to maximize on customer satisfaction and sales.
  • Ensures that harmony exists between the kitchen and the service staff and capable of solving any upcoming conflicts.
  • Administers the Restaurant POS system and ensures that all prices in the POS system as well as on the menus are up to date. Ensures that all restaurant collateral is always updated and well presented.
  • Keeps oneself updated on new and changing trends within the market and makes suggestions for the Outlet for any opportunity of improvement.
  • Ensures that he/she is visible and available for guests and staff alike.
  • Takes full responsibility for the performance of the Restaurant including financial performance, operational performance and health and safety.
  • Ensures that all staff members have a neat, clean, professional appearance at all times.
  • Makes sure that all staff are in full uniform at all times and are well groomed.
  • Checks cleanliness and hygiene levels in all areas on a daily basis and ensures that all is compliant with HACCP.
  • Actively promotes Customer Relationship Management through the appropriate interaction with guests.
  • Promotes teamwork within the restaurant and leads by example.
  • Finishes all requested tasks on time and ensures that all deadlines are met.
  • Manage day-to-day staffing requirements, plans and assigns work and establishes performance and development goals for team members.
  • Actively work on the restaurant floor during service, supervising and participating in daily operations to ensure a smooth and efficient workflow.
  • Performs any additional tasks assigned by senior management with a positive, can-do attitude.
  • Ensures that all Company property is safeguarded and taken care of at all times.
  • Monitor’s food and beverage quality to ensure that high standards are maintained at all times.


Managing and Duties

  • Analysis all feedback received from guests, identifies areas for improvement and formulates solutions accordingly.
  • Supervises the performance of all employees, gives appropriate feedback to all staff on a regular basis and intervenes when needed to avoid conflict or challenges.
  • Performs daily walk abouts in order to ensure standards, quality of service and performance.
  • Works closely with other managers from other outlets when needed to maximize collaboration between the restaurants.
  • Delegates and assigns duties to all staff as needed.
  • Interact with guests, promptly addresses inquiries and resolves concerns efficiently to enhance guest’s dining experience.
  • Prepares monthly objectives for the Restaurant in addition to ongoing job responsibilities.
  • Gives suggestion for marketing improvement to increase brand awareness.


Finance and Control Duties

  • Understands and prepares the monthly Restaurant Forecasts and works together with the team to accomplish these forecasts.
  • Ensures that cross training is carried out during slower months to have a more cost-effective operation during these low volume periods.
  • Is effective in proper cost control for all items in stock.
  • Monitors staff attendance and absence to ensure that these costs are being well controlled.
  • Ensures that cash procedures are being followed and executes all financial policies.
  • Reacts immediately to losses of stock or revenue, as well as any other high costs and takes necessary action to prevent this recurring.
  • Ensures that the Restaurant meets (and where possible exceeds) the monthly financial targets set in terms of revenues and costs.

Job Skills

  • The employee will have at least twelve (12) months experience in a fast-paced restaurant working as a Restaurant Manager.
  • Possess excellent communication and team management skills and able to execute effectively given instructions.
  • Hold a qualification in food and beverage management or a related field.
  • Possess a valid Food handler’s license.
  • Strong problem-solving skills and able to think outside the box.
  • Ability in prioritizing tasks and manage time effectively.
  • Possess leadership and training skills to be able to motive and train the team.
  • Demonstrates capability of working effectively and efficiently in a stressful environment ensuring the maintenance of high standards.
  • Invests in training to constantly improve the restaurant’s performance.
  • Understands good food safety and hygiene practices.


Human Resources and Training

  • Takes the initiative to hold periodic meetings with staff members to address all areas of the restaurant operation.
  • Practices good leadership skills and motivates staff and develops good working relationships with all employees.
  • Maintains effective communication within the restaurant including daily briefings.
  • Assigns duties within the Restaurant to maximize on each employee’s talents, skills and knowledge.
  • Follows up daily on food quality, service and standards.
  • Identifies training needs and implements training accordingly.
  • Assists in the planning and execution of training as needed.
  • Ensures that a proper orientation for all new employees is carried out and that all policies are provided and explained to them.
  • Ensures that weekly staff schedules are prepared in accordance with forecasts and business trends in all areas of the restaurant, and that the manning levels reflect the business being generated at any point in time.


Customer Relations

  • Smiles and greets all guests upon entering the restaurant, personally escorts them to their table and pulls out at least one chair at the same time showing an “open arm gesture” to welcome the guests to take a seat.
  • Ensures that all Guests are treated with respect by all employees, including proper greeting and seating as per above.
  • Engages with customers to gather feedback, address concerns and creates a welcoming atmosphere that encourages repeat visits.
  • Resolves any guest complaints in a calm and efficient manner.
  • Works and assists employees on the floor.


Safety and Security

  • Ensures that agreed safety practices are in place to reduce the risk of work-related accidents.
  • Is completely knowledgeable of all fire, emergency and evacuation procedures and ensures that all staff are also knowledgeable in these areas.
  • Ensures that all hazards or potential hazards are reduced as reasonably possible.
  • Follows up to ensure that all employees are using the proper provided protective clothing and equipment where necessary.
  • Ensures that all staff are working in a safe manner that does not harm them or others around them.
  • Ensures that all health and safety regulations are being followed in line with HACCP.
  • Responsible to see that the Restaurant is safe for all employees and guests, at all times.
